Manic Martha Moment- Toffee Oatmeal Cookies

Here it is, the first Manic Martha Moment. I am going to share what I made first, then the details.

Toffee Oatmeal Cookies (adapted from Heath recipe)

These may be my new all time favorite cookie, they are the perfect coffee dunking cookie.

Ingredients:

  • 1 cup butter
  • 2 eggs
  • 2 cups packed light brown sugar
  • 2 tsps vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/2 tsp salt
  • 2 cup rolled oats
  • 1 1/3 cup Heath toffee bits

Directions:

  1. Heat oven to 375, lightly grease cookie sheet
  2. Beat butter, eggs, brown sugar, and vanilla together. Add flour, baking soda, cinnamon, and salt , mix well. Stir in oats and toffee bits.
  3. Drop dough by tablespoons full, about 2 inches apart. Bake 9-11 minutes, or until edges are lightly browned. Cool for a minute on sheet, move to wire rack to cool completely.

  1. Okay, this sounds cool and like it or not, I am a huge MARTHA fan! I'll definitely look at my stuff and join your meme. Just one thing...today is day 1 of my workout challenge and I finally forced myself to join sparks people, so I wanted to thank you for posting a delicious recipe I cannot have!!!!!LOL... You have the best ideas.
